Looks wonderful! I think I might try putting the pecans on the brie and baking it for a few minutes, then adding the dulce de leche.
Shudda mentioned the large grapes hollowed out and filled with goat cheese -- nice savory/sweet taste; second in deliciousness to the brie
If the Dulce de leche is to thick then heat it for a few minutes so you can deal with it easier.
